Mashed Potatoes and Leeks

Ingredients

  • 2 lbs. baking potatoes
  • 3 leeks
  • 1/2 cup milk
  • 4 Tbsp. unsalted butter, softened

Preparation

Step 1



Bake potatoes. Trim root ends and all but 1 inch of green tops of leeks. Cut into 1/2 inch slices and place in saucepanwith lightly salted water. Cover and simmer 15 mins. and drain. Remove potatoes from skins and add to leeks. Mash together then add milk and butter. Do not try to remove lumps. Season with pepper.
