Pork Tenderloin and Potato Salad

Ingredients

  • 2 Tbsp each dijon mustard and grainy mustard
  • 1/2 tsp sage
  • 1 Tbsp each olive oil and cider vinegar
  • 1 tsp brown sugar
  • 2 cloves garlic
  • 1 # pork tenderloin
  • 1/4 tsp salt and pepper
  • 1 # red potatoes
  • 2 Tbsp mayo
  • 2 Tbsp chopped gherkin pickles
  • 6 green onions chopped

Preparation

Step 1

Combine mustards,sage,oil,vinegar,sugar and garlic
Remove 1 Tbsp and reserve for the potato salad
Add pork to the bowl turning to coat
Cover and let marinate for 10 min or upto 8 hours
Cook potatoes until tender and cool
Combine mayo,pickles,onion,salt and pepper and 1Tbsp of mustard mix
Add potatoes and toss
Cook pork
