Pork Tenderloin and Potato Salad

Ingredients
- 2 Tbsp each dijon mustard and grainy mustard
- 1/2 tsp sage
- 1 Tbsp each olive oil and cider vinegar
- 1 tsp brown sugar
- 2 cloves garlic
- 1 # pork tenderloin
- 1/4 tsp salt and pepper
- 1 # red potatoes
- 2 Tbsp mayo
- 2 Tbsp chopped gherkin pickles
- 6 green onions chopped
Details
Preparation
Step 1
Combine mustards,sage,oil,vinegar,sugar and garlic
Remove 1 Tbsp and reserve for the potato salad
Add pork to the bowl turning to coat
Cover and let marinate for 10 min or upto 8 hours
Cook potatoes until tender and cool
Combine mayo,pickles,onion,salt and pepper and 1Tbsp of mustard mix
Add potatoes and toss
Cook pork
