Minestrone

I add cooked chicken to this and make a chicken and noodle, leave beans out.

Ingredients

  • 4 tbs evoo
  • 1/2 c onions, chopped
  • 1/2 c carrots, slices
  • 1/2 c celery, diced
  • 1-2 cloves garlic
  • 6 c low sodium chicken broth
  • 1 can diced tomatoes
  • 1 c macaroni, measure dry
  • 1 c white beans
  • 2 tsp parsley, chopped, fresh
  • 1/2 tsp pepper
  • 1/4 c parmesan cheese, grated

Preparation

Step 1

Heat evoo in soup pot and add vegetables and garlic. Cook until crisp tender about 5-7 minutes. Add all other ingredients, except cheese. Simmer about 30 minutes until thoroughly heated and veggies are tender. Garnish with cheese as served.
