Chipotle Lime Marinated Flank Steak

Ingredients

  • c. chipotle-tomatillo salsa:
  • 1 1/2-2 lbs. beef flank steak
  • 2/3 c. dry red wine
  • 3 tbsp. lime juice
  • 2 tbsp. soy sauce
  • 2 canned chipotle peppers in adobo sauce
  • 2 tbsp. fresh cilantro
  • 1 tbsp. cooking oil
  • 4 cloves garlic, minced
  • 6 tomatillos
  • 2 canned chipotle peppers in adobo sauce
  • 1/4 c. red onion
  • 1/4 tsp. lime peel
  • 1 tbsp. lime juice
  • 1 tbsp. cilantro
  • 2 garlic cloves, minced
  • 1 tbsp. honey
  • 1/4 tsp. salt

Step 1

Score both sides of the steak by making shallow cuts at 1" intervals diagonally in a diamond pattern. Place meat in resealable plastic bag and set in shallow dish.

For marinade, stir together red wine, lime juice, soy sauce, chipotle peppers (seeded and finely chopped), snipped cilantro, cooking oil, and garlic. Pour over steak; seal bag. Marinate in fridge for 4-24 hrs, turning bag occasionally.

Drain steak, reserving marinade. Cook steak on the rack of an uncovered grill directly over flames on medium for 17-21 min. for medium doneness, turning once and brushing w/ marinade halfway. Discard rest of marinade.

Cut steak in half diagonally across grain. Cool; wrap half steak in plastic wrap and refrigerate for up to 3 days; serve w/ 1 cup chipotle-tomatillo salsa.

CHIPOTLE-TOMATILLO SALSA:
Stir together 6 husked and finely chopped tomatillos; 2-3 chipotle peppers (seeded and finely chopped); finely chopped red onion, lime juice, cilantro, garlic, honey, and salt. Cover and let stand at room temp 30 mins to blend flavors.
