Ingredients
- Cake roll:
- 3 eggs
- 1 cup sugar
- 2/3 cup pumpkin
- 1 teaspoon lemon juice
- 3/4 cup flour
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1 teaspoon ginger
- 1 cup of chopped nuts (pecans/walnuts)
- Filling:
- 1 cup powder sugar
- 6 oz softened cream cheese
- 4 Tablespoon softened butter
- 1/2 teaspoon vanilla

Preparation
Step 1
Preheat oven to 375 degrees
Beat eggs on high for five minutes. Gradually add sugar. Stir in pumpkin and lemon juice. Set aside
Mix in the remaining cake roll ingredients. Fold into pumpkin mixture. Spread in a greased and floured jelly roll pan (15 x 10 x 1).
Top with 1 cup of chopped nuts
Bake for 15 minutes. Turn on flour sack towel, sprinkle with powder sugar. Start at narrow end, roll towel and cake together. Let cool.
While cake is cooling, maix all filling ingredients until smooth.
Spread on cake - roll up and chill
