Ingredients
- 1/2 cup Light Zesty Italian Dressing
- 4 small boneless skinless chicken breast halves
- 1/4 cup Parmesan style grated cheese
- 1 pkg. fresh mushrooms
- 2 tbsp. chopped basil
- 1/4 cup shredded 4 cheese italian cheese.
Preparation
Step 1
Heat oven to 350
Pour dressing over chicken in zip-lock bag; turn to
evenly coat chicken. Refrigerate 1 hour to marinate.
Remove chicken from marinate. Place grated topping in
shallow dish. Add chicken; turn to evenly coat both
sides of each breast. Place in single layer in shallow
pan sprayed with cooking spray.
Bake 30 minutes.
Meanwhile, cook mushrooms in skillet with 2 tbsp. of
butter on high heat until mushrooms are tender,
stiring frequently. Stir in basil.
Top chicken with mushrooms and shredded cheese; bake
5 minutes or until cheese is melted.
SUBSTITUTE basil for cilantro or parsley.
