Dessert - Cenci

‘Cenci’ are a popular Tuscan sweet that can be found durino the period of ‘Carnevale’. Every region of Italy gives it’s own name to this sweet and the ingredients also vary from region to region.

Ingredients
- 300 grms flour
- 50 grms sugar
- 2 eggs
- 30 grms butter fuso
- 1/2 glass of Vin Santo wine ( typical to Tuscany)
- Grated orange peel
- 1 pinch of salt
- Peanut Oil
- Icing Sugar
Preparation
Step 1
In a mixing bowl knead together all of the ingredients, making sure that it is mixed very well . You will have a shiny dough. Form a ball and then leave to sit for 1 hour.
Form the dough until you have made the shapes that you like , you can also form small knots.
In a sauce pan heat the peanut oil and when it is hot enough ( not smoking), place the cenci into the oil for 3-4 minutes. Drain on absorbent paper, place on a serving dish and sprinkle generously with the icing sugar. Better to serve hot than when cold.
