Wild Duck in Foil

Ingredients

  • 1 wild duck
  • Salt & pepper
  • 1 medium onion
  • 1/4 cup red wine
  • 1/2 t thyme
  • 1 pat butter

Preparation

Step 1

Wash duck, pat dry inside and out.
Rub cavity with salt and pepper.
Place onion in cavity.
Place duck on large piece of heavy foil.
Dribble wine over duck.
Sprinkle with thyme.
Top with pat of butter.
SEAL FOIL TIGHTLY.
Bake at 325˚ 3 1/2 hours.

Serve with wild rice and red wine. Juices from the duck are delicious with crusty bread.
