Mu Shu Turkey

Ingredients

  • 1 (16 oz.) can plums, drained and pitted
  • 1/2 cup orange juice
  • 1/4 cup finely chopped onion
  • 1 tablespoon minced fresh ginger
  • 1/4 teaspoon ground cinnamon
  • 1 lb. boneless turkey breast, cut into thin strips
  • 6 (7-inch) flour tortillas, warmed
  • 3 cups coleslaw mix

Preparation

Step 1

Place plums in food processor or blender; process until almost smooth. Combine plums, orange juice, onion, ginger and cinnamon in slow cooker; mix well. Place turkey over plum mixture. Cover and cook on LOW for 3 to 4 hours.

Remove turkey using slotted spoon. Divide evenly among tortillas. Spoon about 2 tablespoons plum sauce over turkey in each tortilla; top each with about 1/2 cup coleslaw mix. Wrap to enclose filling. Use remaining plum sauce for dipping.
