Guidelines for converting Fahrenheit degrees to Celsius and Gas Mark.

We include doneness temperatures in many of our recipes, such as those for poultry, meat, and bread. We recommend an instant-read thermometer for the job. For temperatures not represented in the chart above, use this simple formula:
Subtract 32 degrees from the Fahrenheit reading, then divide the result by 1.8 to find the Celsius reading.
EXAMPLE:
“Roast until the juice runs clear when the chicken is cut with a paring knife or the thickest part of the breast registers 160 degrees on an instant-read thermometer.” To convert:
160˚ F – 32 = 128˚
128˚ ÷ 1.8 = 71˚ C (rounded down from 71.11)
