Golden Corn and Potato Salad

Ingredients
- 8 ounces small yellow or red poatatoes
- 3 cups fresh corn kernels cut off the cobb, about 4 ears
- 2 cups cherry tomatoes halved
- 1 1/2 cups chopped red bell pepper
- 1/4 cup minced shallots
- 3 tablespoons white balsamic vinegar
- 1 tablespoon dijon mustard
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 3 tbsp evo
- 6 cups arugula or any kind of lettuce
- 1/2 cup torn fresh basil
- 2 ounces feta or goat cheese

Preparation
Step 1
1. Boil potatoes and cut in half.
2. Combine potatoes, corn, tomatoes, and bell pepper in bowl.
3. Combine shallots and next 4 ingredients in small bowl and stir with wisk. Slowly add evo into mixture. Drizzle over corn and potato mixture. Add basil and toss with lettuce.
