Ingredients

  • 8 ounces small yellow or red poatatoes
  • 3 cups fresh corn kernels cut off the cobb, about 4 ears
  • 2 cups cherry tomatoes halved
  • 1 1/2 cups chopped red bell pepper
  • 1/4 cup minced shallots
  • 3 tablespoons white balsamic vinegar
  • 1 tablespoon dijon mustard
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 3 tbsp evo
  • 6 cups arugula or any kind of lettuce
  • 1/2 cup torn fresh basil
  • 2 ounces feta or goat cheese

Preparation

Step 1

1. Boil potatoes and cut in half.
2. Combine potatoes, corn, tomatoes, and bell pepper in bowl.
3. Combine shallots and next 4 ingredients in small bowl and stir with wisk. Slowly add evo into mixture. Drizzle over corn and potato mixture. Add basil and toss with lettuce.
