- Dry rice, cooked (day old is best)
- Green onions
- Sesame oil
Always use really dry rice. Day-old is best. If your rice is wet, spread it on a cookie sheet and dry it in a 250˚ oven or toast in wok over low heat.
Fry ginger in wok for a crispy topping. Make the fried rice in the same oil.
Fry eggs in a skillet.
Place eggs on top of rice and sprinkle with tomato & green onions.
Drizzle with sesame oil for flavor.
