ROYAL RICE WITH WILD MUSHROOMS

Ingredients

  • 1 TBS butter or olive oil
  • 1 8-10 oz package baby bellas, sliced
  • 2 cloves garlic, minced
  • 1 cup rice blend (Royal Blend Texmati, Red Rice blend)
  • 14 oz chicken broth
  • 1/2 cup frozen peas
  • 1/2 cup grated parmesan

Preparation

Step 1

1. In large saucepan melt butter over medium-low heat. Add mushrooms and garlic, cook stirring frequently until tender, about 3".
2. Add rice and broth; bring to a boil over medium-high heat. Reduce heat, cover and simmer until rice is tender and broth is absorbed about 15".
3. Stir in peas. Remove from heat; cover and let stand 10". Stir in parmesan.
