Grandma Scovil's Cream Pie Filling
- 2 cups milk
- 1/2 cup sugar
- 2 egg yolks
- 2 rounded Tablespoons cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla
Pour 1 1/2 cups of milk in a heavy medium sauce pan. Add the sugar and salt. Mix the cornstarch in the other 1/2 cup of milk. Beat egg yolks until lemon colored. Add to cornstarch mixture. When the milk comes to a simmer, pour a small amount at a time into the cornstarch and egg mixture; tempuring the eggs. Then add vanilla.
Pour pie filling into desired pie crust. Add bananas, coconut, or desired ingredient.
