Ingredients

  • 11/2 to 2 pounds of tilapia, cod or haddock choose thick ones
  • 1/2 cup + 1 tablespoon of flour
  • 1/2 tablespoon Baking Powder
  • 1/2 cup water
  • 1 extra large egg
  • 1/2 teaspoon lemon zest (if desired)
  • 1 teaspoon salt
  • 1/8 teaspoon cayenne pepper (can be regular black pepper)
  • Vegetable Oil for frying

Preparation

Step 1

Pour 1/2 inch of oil in 12 inch frying pan heat until 360 degrees

Cut fish in 1 1/2 by 3 inch pieces - Sprinkle with salt and pepper on both sides

In a bowl combine the flour, baking powder, salt and pepper and lemon zest - Whisk in water and then the egg

Dip each fillet in batter - very carefully place in hot oil - do not crowd (keep oil between 360 - 400 degrees) cook 2 to 3 minutes on both sides
