Gluten-free Baked Onion Rings

Ingredients

  • 2 Vidalia onions, sliced into rings and separated
  • 1/2 c. plus 2 tbsp rice flour
  • 2 tbsp corn starch
  • 1 c. cold unsweetened almond milk
  • 1 tsp apple cider vinegar
  • 1 c. cornmeal
  • 1 tsp sea salt
  • 2 tsp olive oil

Preparation

Step 1

Preheat the oven to 450 degrees.

Line a baking sheet with parchment paper and spray it with cooking oil spray.

In a bowl, mix almond milk, rice flour, and corn starch to make a batter. Add apple cider vinegar and mix well.

Put the cornmeal into another bowl. Be sure to have both bowls accessible.

Dip onion rings into batter, then dip into cornmeal, being sure to coat evenly.

Place rings onto baking sheet, spray lightly with cooking oil spray, and bake for 8 minutes. Turn and bake for another 6 minutes.

Remove from oven, and enjoy.
