  • Cod fillets, frozen and thawed, or fresh- 1 lb.
  • 1 1/2 cups milk
  • 3 Tablespoons butter
  • 1/4 cup flour
  • 1/2 teaspoons salt
  • Pepper
  • 1/3 cup grated cheddar cheese

Step 1

Simmer cod gently in milk, being careful not to let the milk boil. Turn fish once during this simmering period. When the fish is cooked enough to flake, after about 15 minutes, remove it from the milk, saving the liquid. Flake the fish, carefully removing all the bones, and then place the fish flakes in the bottom of a buttered 2 quart casserole. To make sauce, melt butter in a saucepan, blend in the flour, salt and pepper and gradually add the reserved milk. Stir and cook until sauce is thick enough to coat the back of a spoon. Spread the sauce evenly over the fish in the casserole. Cover with grated cheese and bake at 350 degree for 35 minutes. Broil for a minute or two until cheese is browned.
