Ingredients
- 2 pkgs active dry yeast
- 3/8 c water plus 1/1/2 C milk
- 3 eggs
- 4 egg yolks
- 2/3 C sugar
- 1/2 C melted butter or margarine
- 1 1/2 tsp. salt
- 1 tsp vanilla
- 1 tsp. lemon juice
- 1 T grated lemon peel
- 6 - 7 C flour
- 2/3 C golden raisins
Preparation
Step 1
1. Beat eggs and yolks until thick and lemon colored; gradually add all but about 1 T of sugar set aside
2. Mix 3 cups flour and yeast
3. Heat milk, water, remaining 1 T sugar and salt to 120 - 130 degrees,
3. Add gradually to the flour/yeast mixture and blend well; mix 2 minutes at med speed
4. Add egg mixture, butter, vanilla, lemon juice and peel and raisins
5. Add flour until dough no longer clings to sides of mixing bowl; knead for 8 - 10 min. until smooth and elastic
6. Place in greased bowl and spray top; cover with cloth
7. Place in warm place (preheated oven to 200 degrees and turned off) until doubled
8. Punch down and divide into 2 loaves; place in greased laof pans; cover and rise in warm place until doubled
9. Bake at 325 for 45 min. until golden
