SWEET POTATOES

Ingredients

  • SYRUP:
  • sweet potatoes
  • salt
  • margarine
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 2 cups light corn syrup
  • 1/2 cup water
  • 1 cup brown sugar
  • 2 tablespoons margarine
  • 2 cups mini marshmallows

Preparation

Step 1

Cook, skin and quarter pototes. Layer into glass pan.

Sprinkle lightly with salt, but margarine on first layer, to taste.

Add syrup, cover tightly and leave in refrigerator overnight.

Unwrap and bake at 350° F. for 45 minutes or until hot and bubbly.

Sprinkle with marshmallows and return to oven for 5 minutes or until marshmallows have melted.

SYRUP:

Mix together all ingredients, cook for 5 minutes. Pour over sweet potatoes and bake.
