homemade ricotta cavatelli

this is what I was used to when I was young, and what my family enjoyed too years later.

Ingredients
- 1 15 oz. ricotta
- 4 cups flour
- pinch of salt
- 1 medium egg
- homemade sauce

Preparation
Step 1
COMBINE: flour, salt, egg, cheese. Mix thoroughly.
KNEAD: this mix. on a lightly floured board til smooth. Set aside.
*CUT small chunk from dough, roll quickly into thin finger rolls (1/2 dia.)
Flour well and feed these rolls into your floured machine, to avoid sticking.
ARRANGE AND SEPARATE cavatelli on a floured board. Sprinkle w/ more flour. Repeat from * til all dough is used.
TO COOK: drop in GENTLY into rapidly boiling salted water. stir 12-15 min.
DRAIN well, top w/ sauce and enjoy!
