Raw Vegan Apple Crumble

I try to remain as sugar-free as possible, but when I do have an unstoppable sweet tooth, this dessert is very satisfying!

Ingredients

  • For the base:
  • 1/2 c. oats
  • 1/3 c. almond meal
  • 2 tbsp chopped dates
  • 1/4 c. agave nectar
  • Cinnamon
  • For the filling:
  • 1 huge Granny Smith apple
  • 1/4 c. brown sugar (I substitute raw Stevia)
  • 1/4 c. agave nectar
  • Dash of vanilla
  • 1 tsp cinnamon
  • For the topping:
  • 1/3 c. oats
  • 1/3 c. almond meal
  • 1/4 c. brown sugar (again, I use Stevia)
  • 1/4 c. agave nectar

Preparation

Step 1

Base:

In a medium bowl, combine all ingredients and mix well. Smoosh mixture into bottom of bowl, flattening as much as possible to form a "pie crust" base. Set aside.

Filling:

Core apple and chop into small pieces. In medium bowl, combine apple pieces, agave nectar, brown sugar (or stevia), a dash of vanilla, and 1 tbsp cinnamon. Mix well, then pour this over the base you have set aside, smoothing evenly so that all of the crust is covered with filling.

Topping:

Blend all ingredients for topping into a bowl; mix well. Crumble this topping over the top of the filling, making sure to cover as evenly as possible.


You can serve this dessert immediately after making it if you wish, but I have found that the flavors marinate well together if dessert is refrigerated for a couple of hours before serving.
