Savory Bean and Spinach Soup(skinny)

Ingredients

  • 3 1/2 c water
  • 1 can(15oz) tomato puree
  • 1 can(15oz)small white beans or Great Northern beans, rinsed and drained
  • 1 can vegetable broth
  • 2 small onions, finely chopped
  • 1/2 c uncooked rice
  • 1 1/2 t dried basil
  • 1/4 t pepper
  • 2 cloves garlic, minced
  • 8 c coarsely chopped spinach
  • 2 T finely shredded Parmesan Cheese

Preparation

Step 1

In a slow cooker, combine the water, tomato puree, beans, broth, onions, uncooked rice, basil pepper and garlic.

Cover and cook on low for 5-7 or on high for 2.5 to 3.5 hours.

Before serving stir in spinach. Sprinkle each serving with Parmesan cheese
