Ingredients
- Penne
- 1/4 cup olive oil
- 2 medium zucchini cut into half moon shapes
- 3 cloves garlic, minced
- 2 tsp grated lemon zest
- 1/4 cup parmigiano-reggiano
- 3 T chopped basil
- 3 T chopped parsley
- Salt & Pepper

Preparation
Step 1
Boil pasta, reserve some water.
Heat olive oil in large skillet. Add zucchini and cook until slightly brown. Add garlic and cook until fragrant. Remove from heat and add lemon zest, salt & pepper.
Drain the pasta, reserving 1/2 cup of the water. Add zucchini to pasta along with the cheese, basil and parsley. Season to taste with salt & pepper. Toss to combine adding pasta water as needed.
