Ingredients
- 2 cups olive or canola oil
- 2 5-inch sprigs fresh rosemary
- 20 fresh garlic cloves, peeled
Preparation
Step 1
Hot Method:
1. Heat all ingredients slowly to 220-250 degrees;
simmering for 20 minutes
2. Cool
3. Strain oil through several layers of cheesecloth
4. Store in the refrigerator in a lightly closed bottle
Cold Method:
1. Toast and grind rosemary and garlic
2. Add 1/3 of spices to 2 cups oil in a jar or tight sealing
plastic container
3. Keep at room temperature for 3 days
4. Shake daily
5. Strain
6. Store in the refrigerator
