SUGAR CREAM PIE

Ingredients

  • 9 in pie shell (unbaked)
  • 2 C. heavy cream (my mom used to skim it right off the milk cans!)
  • 1 C. dark brown sugar
  • 2 T (scant) flour
  • dash nutmeg

Preparation

Mix the flour and brown sugar together. Slowly add the cream and mix (I use a wire whip but carefully--don't really whip it or the cream will start to set up. Pour into shell and sprinkle with the nutmeg. The shell should have some room because the cream rises while baking then collapses back into the shell.

Bake at somewhere between 375 and 400 degrees for about 50 minutes--until a knife slides out clean. Pie will set up as it cools.
