Pineapple Dragon Stir Fry

  • 2 cups white rice uncooked
  • 1 can 20 oz pineapple chunks
  • 1/2 cup water
  • 1/3 cup plus 1 tbsp low sodium soy sauce
  • 2 tbsp cornstarch divided
  • 3/4 to 1 tsp crushed red pepper
  • 3/4 tsp garlic powder
  • 1 pound skinless chicken cut into strips
  • 2 tbsp oil
  • 2 cups brocolli flowerets
  • 3/4 cup red bell pepper chunks
  • 1 small carrot thinly sliced
  • 1 tsp minced fresh ginger

Step 1

Prepare rice
Drain pineapple reserve 1/4 cup juice
Stir tog juice water 1/3 cup soy sauce 1 tbsp cornstarch red pepper and garlic and set aside
Combine chicken with remaining cornstarch and soy sauce in medium bowl. Heat oil in pan and add chicken and stir fry 4-5 minutes toll lightly browned. Add broccoli pepper and carrot and ginger. stir fry till tender Add reserving soy sauce mixture cook stirring 2-3 min till sauce boils and thickens Stir in pineapple chunks and heat through. Serve over rice
