Ingredients

  • Optional:
  • 6 Boneless Chicken Breast Halves
  • 1 can (Rotel) tomatoes with green chilies (drained)
  • 2 cans cream of mushroom soup
  • Taco Chips (lo fat) crushed
  • Finely Grated Colby/Jack or Mexican blend Cheese
  • Stouffers Chicken Stuffing Mix (dry), use 1 additional can of cream of mushroom soup and blend with stouffers stuffing mix
  • and
  • Sliced Mushrooms

Preparation

Step 1

Line baking dish with foil and spray with PAM.

Place chicken breasts in pan.

In small bowl, mix mushroom soup, rotel tomatoes (drained) and pour over chicken

Spoon soup/stuffing mix around sides of chicken breasts (add sliced fresh mushrooms around sides of chicken)

Sprinkle the shredded cheese over top of chicken

Bake at 350 for about 45 - 50 minutes until bubbly and hot!

10 minutes before serving, sprinkle crushed tortilla chips over top
