Pizza Smothered Baked Potatoes

Ingredients
- 4 medium baking potatoes
- 1/2 lb. lean ground beef
- 1/2 c. green pepper, chopped
- 1 small onion, chopped
- 1 tomato, chopped
- 1/2-3/4 c. Contadina Pizza Sauce
- 1 c. shredded part-skim mozzarella cheese
- fresh oregano, optional

Preparation
Step 1
Bake a regular sized potato (3"-4" long), in a conventional oven 50-60 minutes at 350-400°F or a microwave oven about 10 minutes. While potatoes are cooking, cook beef, green pepper and onion in a large skillet over medium heat, until meat is no longer pink. Drain if necessary. Stir in tomato and pizza sauce; heat thoroughly. Split baked potatoes in half lengthwise. Use a fork to fluff each potato center. Spoon meat mixture into each potato; top with mozzarella cheese. Sprinkle with oregano if desired and serve.
