Ingredients
- 50 50 1/4 ml onion, chopped 1/4 cup
- 50 50 1/4 ml green pepper, diced 1/4 cup
- 5 5 1 ml oil 1 tsp
- 500 500 2 ml potatoes, chopped & cooked 2 cup
- 150 150 2/3 ml swiss cheese, grated 2/3 cup
- 150 150 2/3 ml milk 2/3 cup
- 4 4 4 eggs 4
- 1 1 4 L spinach, chopped 4 cup
- 2 2 1/2 ml salt 1/2 tsp
- 1 1 1/4 ml pepper 1/4 tsp
- 8 8 8 slices bacon, cooked & crumbled 8

Preparation
Step 1
Sauté onion and green pepper in oil until onion is transparent. Add potato and cheese. Turn into a baking dish. Combine milk, eggs, spinach and seasonings. Pour over potato mixture. Sprinkle with bacon. Bake at 350 F (180 C) until knife inserted into centre comes out clean; about 30 minutes. Let stand 10 minutes.
