Sauteed Fish with Buerre Meuniere (L'Academie de Cuisine)

Ingredients
- 1 TB oil
- 1/4 cup flour
- 2 fish filets
- 2 TB butter
- 1 TB lemon juice
- 2 tsp chopped parsley
- salt & pepper
Preparation
Step 1
Heat a small skillet over med-high heat. Add oil to the pan.
Season fish with salt & pepper. Dip fish in flour on both sides. Add to pan. Brown on one side and flip to finish cooking.
Remove fish from pan. Turn heat down to med-low. Add butter to pan and cook to brown. Add lemon juice and parsley to pan.
Season and pour sauce over fish.
