Ingredients

  • Frosting:
  • 1/2 cup butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup sour cream
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 medium ripe bananas, mashed
  • 8 oz pkg cream cheese, softened
  • 1/2 cup butter, softened
  • 2 tsp vanilla
  • 3 3/4 - 4 cups icing sugar

Preparation

Step 1

In mixing bowl, cream butter and sugar. Add eggs, sour cream and vanilla. Combine flour, baking soda and salt; gradually add to the creamed mixture. Stir in bananas.
Spread into a greased jelly roll pan (10x15x1"). Bake @ 350 for 20-25 minutes, or until a toothpick inserted in the centre comes out clean. Cool.
For the frosting, beat cream cheese, butter and vanilla together in a medium bowl. Gradually add in icing sugar to achieve the desired consistency. Frost bars, and store in the refrigerator.
Yield: 3-4 dozen bars
