Ice Cream Cheesecake
- 2 containers strawberry ice cream
- 1 1/2 cups graham cracker crumbs
- 6 tbsp melted butter
- 1/4 c + 2 tbsp sugar
- 1 6" store bought cheesecake
- 1 pint strawberries
- Juice 1/2 lemon
Let ice cream soften 30 minutes
Mix graham crackers, butter and 1/4 c sugar
Press mixture in bottom and partly up side of 9" spring form pan. Set aside
Cream ice cream until soft but not melted. Break cheesecake into pieces and beat or fold into ice cream.
Pour mixture into pan and put in freezer to set
Combine strawberries and 2 tbsp sugar and lemon juice
Warm over medium heat 3-5 minutes. Chill
To serve, remove sides of pan. Top with strawberries.
