Ingredients
- FILLING:
- 6 T BUTTER, SOFTENED
- 1 C POWDERED SUGAR
- 1 EGG
- 2 SQUARES UNSWEETENED CHOCOLATE, MELTED & COOLED
- 3 t VANILLA
- 1-1/2 C FLOUR
- 1/2 t BAKING SODA
- 1/3 C CREAM CHEESE, SOFTENED
- 1 t VANILLA
- 1 C FLAKED COCONUT
- 1/2 C FINELY CHOPPED PECANS
Preparation
Step 1
IN A SMALL BOWL, CREAM BUTTER AND SUGAR UNTIL LIGHT AND FLUFFY. BEAT IN THE EGG, CHOCOLATE AND VANILLA. COMBINE FLOUR AND BAKING SODA; GRADUALLY ADD TO CREAMED MIXTURE AND MIX WELL. CHILL FOR 1 HOUR
IN ANOTHER BOWL, COMBINE CREAM CHEESE AND VANILLA. STIR IN COCONUT AND NUTS UNTIL BLENDED--CHILL 1 HOUR
SHAPE DOUGH INTO AN 8-1/2" X 6 " RECTANGLE. SHAPE FILLING INTO AN 8-1/2" LOG; PLACE ON TOP OF THE DOUGH. WRAP DOUGH AROUND FILLING, SEALING THE SEAM. WRAP IN PLASTIC WRAP AND CHILL 2-3 HOURS UNTIL FIRM.
CUT INTO 1/4" SLICES. PLACE 2" APART ON PARCHMENT LINED BAKING SHEETS. BAKE AT 375 FOR 10-12 MINUTES OR UNTIL SET--REMOVE TO WIRE RACKS TO COOL
