Ingredients

  • 3 potatoes
  • 1 carrot
  • 1 leek
  • 1 clove of garlic
  • 1 onion
  • 1 tbsp vegetable oil
  • 2/3 c milk
  • 1/2 cup cheddar cheese
  • 1 1/2 cups canned mixed beans
  • 1 1/2 cups canned chopped tomatoes
  • 1 tsp dried mixed herbs
  • 1 tsp tomato paste
  • 3 tbsp water
  • salt and pepper

Preparation

Step 1

Wash, peel and cut potatoes into chunks. Cook them until tender. Prepare the other vegetables while potatoes are cooking. Dice the carrot. Slice the leek. Crush the garlic, peel and chop the onion. Drain and rinse the beans.

Fry all the vegetables for 10 minutes. Add the beans, tomatoes, herbs, tomato paste, and water. Stir thoroughly, season and simmer mixture for 5 minutes.

Mash the potatoes, adding half of the cheese.

Spoon the beans and tomato mixture into an ovenproof dish and top with the cheesy mixture. Sprinkle over the remaining cheese.

Bake for 20 minutes.
