Italian Spinach Soup

Ingredients

  • 1 med. onion chopped
  • 4 cloves garlic minced
  • 2 tsp Italian seasoning
  • Saute 5 min
  • 2 tblsp butter
  • 2 tblsp dry sherry
  • 2 14 oz. chicken broth
  • 1 large potato - peeled & chopped
  • 2 9 oz spinach or 1 1/4 spinach fresh
  • 2 c. watercress - tough stems removed
  • 2 oz Parmesan shaved
  • 2 small tomatoes - quartered, seeded & thinly sliced

Preparation

Step 1

In 4 qt. Dutch oven, cook onion & seasoning in butter - 5min
Add sherry - stir in 1 min.
Add potato & broth - bring to boil

Simmer 10 min.

Remove from heat

Set aside 2 c. spinach - stir in remaining spinach - cook 5 min

Transfer soup 1/2 at a time to a food processor

Return to Dutch oven - Heat thru & season S&P

Serve w/ remaining spinach/cheese/tomato
