Italian Spinach Soup

Ingredients
- 1 med. onion chopped
- 4 cloves garlic minced
- 2 tsp Italian seasoning
- Saute 5 min
- 2 tblsp butter
- 2 tblsp dry sherry
- 2 14 oz. chicken broth
- 1 large potato - peeled & chopped
- 2 9 oz spinach or 1 1/4 spinach fresh
- 2 c. watercress - tough stems removed
- 2 oz Parmesan shaved
- 2 small tomatoes - quartered, seeded & thinly sliced

Preparation
Step 1
In 4 qt. Dutch oven, cook onion & seasoning in butter - 5min
Add sherry - stir in 1 min.
Add potato & broth - bring to boil
Simmer 10 min.
Remove from heat
Set aside 2 c. spinach - stir in remaining spinach - cook 5 min
Transfer soup 1/2 at a time to a food processor
Return to Dutch oven - Heat thru & season S&P
Serve w/ remaining spinach/cheese/tomato
