Chocolate Chip Frosting

Fabulous recipe for chocolate frosting. There is a bit of a learning curve. It needs to boil in microwave for three and a half minutes but be careful because it bubbles up and can boil over. So it really needs to be watched the whole time and stopped if necessay. The boil is necessary for it to thicken. Much easier in microwave rather than double boiler. Quality chocolate chips is a must. I like best Kirkland chips from Costco. Also good is Nestles and Giradelli. Don’t use cheap generic. If Aldi, it needs to be their seasonal dark chocolate chips only available during early Christmas time.

Ingredients

  • 6 tablespoons margarine
  • 6 tablespoons milk (3.1)
  • 1 cup sugar (7 oz)
  • 1 cup chocolate chips (6 oz)
  • 1 teaspoon vanilla

Preparation

Step 1

Bring margarine, milk and sugar to a boil in the microwave and boil for 3 1/2 minutes (not cook, but boil). Take care not to over cook or it will harden. Remove from heat and stir in the chocolate chips and vanilla, and beat for several minutes. Spread on cake or brownies when it thickens slightly. It hardens quickly.
