Chocolate Zucchini Cake

  • 9 Tbs. butter or margarine
  • 2 cups sugar
  • 3 eggs
  • 3 1-oz. squares unsweetened chocolate, melted
  • 2 tsp. vanilla
  • 2 tsp. grated orange rind
  • 1/2 cup milk
  • 2 cups coarsely shredded zucchini
  • 2 1/2 cups flour
  • 2 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. cinnamon



Step 1

In a large bowl, cream the butter with the sugar. Beat in the eggs, then the melted chocolate, vanilla, orange rind, and milk. Stir in the zucchini. In another bowl, stir together the flour, baking powder, baking soda, salt, and cinnamon. Stir into the zucchini mixture until the dry ingredients are thoroughly moistened. Turn the batter into a greased and floured tube pan. Bake at 350 for 1 hour, or until it tests done with a toothpick. Cool on a rack.
