Turkey Tortellini Soup

Ingredients
- 4 c reduced sodium chicken broth
- 4 c water
- 4 c coarsely chopped roasted turkey breast (1lb)
- 1 14.5 oz can no salt added diced tomatoes, undrained
- 1 T dried Italian seasoning, crushed
- 1 9oz pkg refrigerated cheese tortellini
- 2 c fresh baby spinach
- 6 T shredded Parmesan cheese (optional)

Preparation
Step 1
In a 5 to 6 quart slow cooker combine broth, the water, chopped turkey, tomatoes and Italian seasoning.
Cover and cook on low for 8 hrs or high for 4 hours. If using low heat setting, turn to high heat setting and stir in the torellini. Cover and cook for another 30 min or until tortellini is tender. Stir in spinach. If desired, sprinkle each serving with Parmesan.
