Ingredients
- 3/4 cup sugar
- 1 tbsp. cornstarch
- 2 large eggs
- 3 egg yolks
- zest of 2 lemons
- juice of 3 lemons
- 1 cup whipped topping
- 1/2 cup confectioners sugar
- blueberries or raspberries
Preparation
Step 1
1. Combine the sugar and cornstarch in a medium pan. Whisk in the eggs,egg yolks, lemon zest, and lemon juice until blended.
2. Turn the heat to low and cook mixture, whisking continuously until it is thick and bubbly, about 6 minutes. Remove from heat.
3. Pour the lemon mixture through a strainer. Discard the large pieces.
4. Lay plastic wrap on top of lemon mixture and place in freezer.
5. Whip the whip till stiff. Slowly add in the confectioners sugar until combined.
6. Pour in the lemon curd and mix until combined.
7. To assemble place some blueberries or raspberries into a parfait glass, pour mousse on top.
8. Serve cold.
