Strawberry Bread

Ingredients

  • 3 cups flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 tbsp. ground cinnamon
  • 2 cups sugar
  • 3 eggs, well beaten
  • 1 1/4 cups salad oil
  • 2 (10 oz.) packages frozen sliced strawberries, thawed and drained
  • 1 1/4 cups chopped pecans
  • Red food coloring (optional)

Preparation

Step 1

Combine flour, salt, soda, cinnamon, and sugar. Make a well in center of dry ingredients; add eggs and oil, stirring only until dry ingredients are moistened.
Stir in strawberries and pecans. Blend in food coloring, if desired.
Spoon batter into 2 lightly greased 8x4x2 5/8 inch loafpans Bake at 350 for 1 hour or until bread tests done. Let stand overnight before slicing.
Yield: 2 loaves

Strawberry Butter
1 10oz. package frozen strawberries
1 cup soft butter
1 cup sifted powdered sugar

Combine ingredients and blend in mixer. Serve with strawberry Bread
Amount: 2 1/2 cups.
