Ingredients
- Cooking spray
- 6 6 oz) 6 (4 oz) links turkey Italian sausage
- 2 2 1/4 c green bell pepper, cut in 1/4 in strips
- 1 1 1/4 c red pepper, cut in 1/4 in strips
- 1 1 1/4 c yellow pepper, cut in 1/4 in strips
- 6 6 6 garlic cloves
- 1 1 1 jar spaghetti sauce
- 1/2 1/2 1/2 c mozzarella
- 6 6 3/4 c cooked penne pasta (about 3/4 c uncooked)
- 2 2 2 T Parmesan

Preparation
Step 1
Heat skillet coated with cooking spray. Add sausage, cook 8 minutes, turning occasionally. Remove from pan and cool slightly Cut sausage into ½ inch slices. Wipe pan and recoat with spray. Place pan over medium high heat. Add peppers, sauté 6 minutes. Add sausage; sauté 2 minutes. Add garlic, sauté 2 minutes. Add sauce and bring to a simmer. Reduce heat, cook 5 more minutes, stirring occasionally. Remove from heat. Add mozzarella, stirring until melted. Place 1 c pasta on plate or bowl, spoon about 1 c sausage over each serving. Sprinkle each serving with 1 parmesan
