Beet & Apple Soup

Ingredients

  • 10 med. beets - 2 1/2 lbs
  • 1 med. sweet onion chopped
  • 1 med. potato - peeled & chopped
  • 1 cooking apple - Granny Smith or Gala - peeled, cored & chopped
  • 3 14 oz reduced sodium chicken broth
  • 2 tblsp dry sherry or white balsamic vinegar
  • 1 8 oz carton sour cream
  • 2 tblsp horseradish
  • 1/4 tsp cayenne pepper

Preparation

Step 1

Peel 8 beets & cut into 1" pcs
reserve 2 for skillet

Combine chopped beets/potato/onion/broth - Boil, reduce heat - simmer 25 - 30 min

Cool 5 min

Use immersion blender or transfer to food processor

Return to Dutch oven - add sherry

Heat thru - add S&P

Horseradish cream - sour cream & horseradish & pepper

Skilled beets - 2 beets
2 tblsp veg. oil
Trim stalks - peel & thinly slice lengthwise
Cook in oil 8 min.
