Ingredients
- 3 cups baby spinach
- 1/2 cup corn (frozen/defrosted or canned)
- 1/2 cup black beans
- 1/4 cup red onions, sliced into half moons
- 1/4 avocado, cut cross wise into thin slices
- 1/2 cup salsa
- 1 tbsp low-fat sour cream

Combine and mix all ingredients except the sour cream in a bowl, then top it off with the sour cream.
