Ingredients
- 2/3 2/3 2/3 cup chopped chicken breast
- 1/2 1/2 1/2 T low sodium taco seasoning
- 2 2 2 tortillas (8 inch)
- 1/4 1/4 1/4 cup fat free refried beans
- 2 2 2 T sliced green onions
- 1/2 1/2 1/2 cup reduced fat Cheddar cheese with jalapeno peppers
- 6 6 6 T salsa

Preparation
Step 1
1. Place chicken in bowl, sprinkle with taco seasoning and toss well.
2. Stack tortillas in skillet, and place over medium heat. Cook about 30 seconds or until warm and soft, turning stack over once. Quickly spread half with 2 T of the refried beans. top with 1 T of the green onions, 1/3 cup chicken mixture, and ¼ cup cheese.
3. Fold tortillas in half and place both quesadillas, folded edges together in pan. Cook 2 minutes on each side or until lightly browned and cheese melts. Cut each into 3 wedges, and serve immediately with salsa.
