Skillet Yum-Yum Sweet Potatoes

Ingredients

  • 2-3 tablespoons butter
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 3 or 4 medium sweet potatoes, peeled and sliced
  • 1 cup water

Preparation

Step 1

Heat the butter in a large (12 to 13 inch) cast iron skillet on medium high.

Stir the sugar and cinnamon into the butter. Add the sweet potatoes and water. Cover, bring to a boil, and reduce the heat to medium. Continue to cook until the potatoes are fork tender, about 25 minutes, turning only to keep from burning.

Remove the lid and cook until liquid thickens, about 5 minutes, watching carefully.
