Chicken Enchiladas

Ingredients

  • 1 Large & 1 Small Can Green Enchilada Sauce
  • 1/2 cup Miracle Whip
  • 1 pt Sour Cream
  • 4 cups Monterey Jack Cheese
  • 1 bunch Green Onion
  • 2-4 cloves Garlic
  • 1 pkg Flour Tortillas

Preparation

Step 1

Take one large can of green enchilada sauce and 2-4 cloves of minced/chopped garlic in a medium pan on medium heat. Rinse 1 lb of boneless chicken breast in pan. Cook chicken.

While chicken is cooking,in a separate bowl place 1 pint of sour cream, 1/2 cup of Miracle Whip and 2 cups of Monterey Jack cheese blend together.

Take chicken out pan, place on cutting board and with a fork, shred chicken. Put shredded chicken back into sauce mixture and combine. Mix together chicken and sauce with sour cream, Miracle Whip and cheese.

In glass baking dish cover bottom dish with green enchilada sauce. Place flour tortillas on counter and fill with heaping spoonful of chicken mixture. Roll and place in glass baking dish. Continue until all chicken mixture is gone.

When your baking dish is full cover with remaining enchilada sauce. Take remaining cheese and cover rolled enchiladas. Cut up green onions and sprinkle over top. Bake in 350 degree oven for 30 minutes. Allow to cool for 5-10 minutes before serving.
