  • 1/3 c 1/3 c dry bread crumbs
  • 1 T 1 T grated Parmesan
  • 1 t 1 t Italian seasoning
  • 1/2 t 1/2 t thyme
  • 1/4 t 1/4 t salt
  • 1/4 t 1/4 t pepper
  • 4 4-oz 4 4-oz chicken breasts
  • 2 T 2 T Dijon
  • 1 t 1 t olive oil
  • 1 t 1 t reduced fat margarine

Preparation

Step 1

Place the first six ingredients in a shallow bowl. Brush chicken with mustard. Roll in crumb mixture. In a large skillet cook chicken in oil and margarine over medium heat for 5-6 minutes per side.
