Ingredients
- 4 (6 inch) corn tortillas
- Spray
- 12 oz frozen pepper stir fry, thawed
- 12 oz chicken breast, cut into bite size pieces
- 2 1/2 t Mexican seasoning
- 1/2 t salt
- 1/4 t crushed red pepper
- 1 c shredded cheddar or mozzarella

Preparation
Step 1
Preheat broiler. Place tortillas on baking sheet, lightly coat each tortilla with spray. Broil 4-5 minutes until crisp, turning once. Set aside. Place pepper stir froy in a colander. Coat a large skillet with spray. Place over medium high heat until hot. Add peppers and sauté 4 minutes. Add chicken, seasoning, salt and red pepper. Sauté 2-3 minutes or until chicken is done. Top each tortilla with ½ c chicken mixture and ¼ c cheese. Broil 2 minute or until cheese melts/
