Farro Salad with Mint, Peas and Feta Cheese

Ingredients
- 2 c farro
- 3.5 t salt
- 2 c peas (fresh or frozen)
- Juice & zest of 1 lemon
- .25c EVOO
- .25t freshly cracked black pepper
- .5 red onion, thinly sliced
- 1 c crumbled feta cheese
- .25c fresh mint leaves, torn
Preparation
Step 1
1. Combine farro w/2t of the salt & 6c H2O in a med pot. Bring to a boil; simmer until tender, ~ 30 min, stirring occasionally. Add peas during the last 4 min of cooking & cook until tender & warmed through. Drain farro mixture & spread on a baking sheet to cool.
2. Meanwhile, whisk together lemon juice & zest, EVOO, pepper, & remaining 1.5t salt in a lg bowl along w/onion, feta & mint; toss. Serve, or store airtight in fridge up to 2 dys.
