Puffy Pancake

Ingredients

  • 1/2 cup. all purpose flour
  • 1/4 cup. sugar
  • 1/2 cup. skim milk
  • 1/2 tsp. grated orange rind
  • 1/8 tsp. ground nutmeg
  • 2 eggs, lightly beaten
  • cooking spray
  • 1 tsp. margarine
  • 2 Tbs. powdered sugar

Preparation

Step 1

Combine first 6 ingredients in a med. bowl; stir well with a wire whisk. Set aside.

Coat a 9-inch pie plate with cooking spray; add margarine. Bake at 475* for 1 min. or until it melts.

Pour egg mixture into pie plate; bake for 5 mins.
Reduce heat to 450*, and bake an additional 7 mins. or until puffed and golden.

Remove from oven, sprinkle with powdered sugar.
Cut pancake in half, and serve immediately.
